Is the chicken breast cooked or raw when it's mixed into the batter? I'm thinking it should be cooked chicken breast that goes into it as I can't picture putting raw chicken to bake in a muffin - but the recipe isn't really clear.
This recipe sounds great, I am not a fan of chicken breast (prefer thigh) and have some in the fridge to use, will definately be trying this one out tomorrow!
I googled that and this is what I found: Oat bran is moister and has a more appealing flavor than wheat bran. Wheat bran is drier and has a less appealing flavor than oat bran.
What a marvelous site. It has made everything so simple. I have been on a high protien diet but will start thi on Wednesday after some planning and shopping. Thanks so much for this awesome site.

you can have corn flour and corn starch, the book says that as it's in such small amounts in recipes, it's allowed

I used Chicken mince in this recipe.
I didn't need to cook it before putting it in the mix either because it cooks in the oven. Turned out great. =)
